Forest is Julien Sebbag’s new restaurant that’s dazzling the Museum of Modern Art by putting plants at the center of the plate.. but that’s only the beginning. Meant to be enjoyed on the vast sunny terrace facing the Eiffel Tower, or set amongst an the interior décor that leaves a lot of room for nature, Julien Sebbag proposes a raw cuisine, one focused on local ingredients and sharing, with Mediterranean and Oriental accents, building on the success of Tortuga. Following the proven model of his seafood spot located at the rooftop of Galeries Lafayette, Julien Sebbag doesn’t really offer starters and main courses at Forest, but rather small plates to share. The menu makes way for plants to take center stage, as they subtly underline the aquatic and the animal, and are on display for all to see from the open kitchen – a result of both projections, an a sheltered, shaded, spacious outdoor terrace with a view of the Eiffel Tower.
