The last piece of the puzzle was to create MIMOSA’s unique identity. For Jean-François Piège, it was an obvious choice. “Very quickly, the idea of a table of the sun, celebrating Mediterranean cuisine, came to me; a style I love but which I had not yet had the opportunity to put into practice” he said.
